Happy Tuesday! This cherry puff galette is one of those bakes that looks impressive but couldn’t be simpler to throw together — which is exactly what I love about it.


Made with buttery, crisp puff pastry and filled with a sweet-tart cherry filling, the whole thing bakes up golden and caramelized around the edges. The cherries bubble up and soften, the pastry gets perfectly flaky, and you’re left with a dessert that’s as easy as it is beautiful.
I love serving this one warm with a scoop of vanilla ice cream, a drizzle of good olive oil, a sprinkle of flaky sea salt, and a few sprigs of fresh thyme. It’s bright, buttery, and simple — the kind of dessert that doesn’t need anything extra, but still feels special.
