These Brownie Ice Cream Sandwiches (w/ Homemade Coffee Chip Ice Cream) start with layers of the most fudgy, decadent brownies. Then those brownie layers get stuffed with a rich and creamy coffee chip ice cream that is churned to absolute perfection, with chocolate chunks dispersed all throughout so you get them in every bite. I don’t know what it is, but the way the fudgy brownies work with that rich coffee flavor…the two were just made for each other!

Then to finish, each one gets coated in melted chocolate with a sprinkle of flaky sea salt on top. It’s just oh-so good. And don’t fret! You can fill these with any ice cream flavor you’d like if you’re not a of coffee — and to make them even easier, use store-bought ice cream!

Happy Saturday! I hope you all had a beautiful week. This week has been really good, but REALLY busy (which I’m thankful for). It’s definitely been one of those weeks where I was looking forward to the weekend and just relaxing, because I feel like our life has been non-stop recently!

To start, we had the absolute best time at my brother-in-law’s wedding in Colorado last week. It was my first time going to Colorado and I must say…I get the hype. It was beyond beautiful! And just to give you a little update — the wedding cake turned out incredible!! I will say that I was slightly worried walking into it because I had no clue of what I was walking into in terms of the kitchen at the Airbnb, the oven, equipment, etc. — but everything turned out exactly how it needed to, and I was really grateful to be a part of their day in such a special way.

This week has honestly just been full of getting back into the groove with work, recipes, filming, etc.! I’ve come to realize that as I’ve gotten older that traveling just wipes me out, and it always takes a few days for me to recover. I don’t know if it’s because of the flying, or feeling out of routine with my day-to-day life, but phew. Thankfully, I’m feeling good now and I’m SO excited for the recipes coming. It’s almosttt fall time for Well Made, and I think you’re all going to love what’s in the works.

A Note for the Week Ahead

“Be still and know that I am God.” — Psalm 46:10

What a beautiful reminder this verse is, and probably one that we all need daily. It’s been a comfort for me this week — after so much travel, a lot of big moments, some moments of stress, I think sometimes all we need to do is be still. He actually calls us to do this, because in those moments of stillness, we can hear Him clearly and reset in His presence!

I think a lot of people can look at moments of stillness and peace and feel guilty…like we don’t need it? I even find myself saying that I need to bounce back immediately and hit the ground running…but there is SO much grace where the Lord meets us in moments of stillness. Sometimes truly the most productive thing we can do is just to pause, listen to Him speak in the quiet and remember who He is and the sons/daughters we are!

Happy Friday! We have a reallyyy good one today, and I can’t think of a better way to kick off the weekend. When I first published/shared this recipe last summer, I was in heaven. But after revisiting it this year, I wanted the dough to be slightly different — more soft, pillowy, melt-in-your-mouth feel. And well, we’ve sure achieved that. There’s something so deeply satisfying about making fritters at home, and I promise you that these are beyond worth it!

These Peach Fritter Donuts with Brown Butter Maple Vanilla Bean Glaze are just perfect for peach season — soft and fluffy on the inside, yet have that perfectly golden and crisp (almost slightly chewy) exterior that makes a really good fritter impossible to beat. Happy Thursday! This is hands-down the best cookies and cream ice cream I’ve ever had…and I can confirm that it’s even better homemade. Plus when served affogato-style over a warm brownie with a shot of espresso poured over top, I mean…come on!

This Brown Butter Cookies and Cream Ice Cream is creamy, rich, decadent, and truly everything you could want in cookies and cream ice cream…and more. This base starts with an Oreo custard that is churned to perfection, with rich and warm nutty brown butter notes that run all throughout! You know me, if brown butter can be added, I’m going to add it — and it pairs so beautifully with the classic Oreo flavor here. This is pure heaven on its own, but I love serving it affogato-style over a warm brownie with a hot shot of espresso over the top (even better if you use my Fudgy Crinkle-Top Brown Butter Brownies). Everything melts together into the most perfect, decadent bite, and UGH. I promise you’ll be in heaven!!

Happy Saturday! I hope you all had a wonderful week. This week has been the most whirlwind week in the best possible way — and I am writing this to you with a wedding cake to finish in just a few hours, so bear with me!!

It all started with a work trip to Utah for an event with Ballerina Farm — and I genuinely cannot say enough good things about it. I have been using their products for years (their farm flour is my absolute favorite, truly nothing compares), so getting to go behind the scenes and see the integrity behind the brand up close was just such a special experience! The passion and care that goes into every single product they make is so evident, and it made me love and appreciate them even more than I already did. And Dustin got to come along for this one which made it even sweeter — always better when he’s by my side on these trips.

Then we flew straight to Colorado for my brother-in-law’s wedding and it has already been so much fun. If you didn’t know, Dustin is one of ten kids — yes, ten!! — so any time we all get to be together it is just the absolute best. There is so much love and laughter in that family and I feel so lucky to be a part of it! And of course, I am making the wedding cake, which I need to go finish in just a few hours so wish me luck!!

There are so many moments in life where we want to control every detail, plan every outcome, and have it all figured out. But this verse is such a gentle and powerful reminder that our job is simply to trust — to submit our ways to Him and let Him direct our steps.

As you head into this new week, whatever feels uncertain or overwhelming or just really big — I hope you can release the need to have it all figured out and just trust. He knows the path, He’s already gone before you, walk forward with a peaceful heart and let Him lead.

Happy Saturday! I hope you all had a beautiful week. This week has been such a good one — and honestly I am feeling so energized and inspired in the kitchen right now. Hello fall recipes!! I know it’s only July but the testing has officially begun and I am having the best time with it. Whatever you are walking into this week — whether it feels exciting or overwhelming or both at the same time — I hope this verse settles over you like a deep breath! You don’t have to have it all figured out, you just have to trust that He’s got you. And He does, completely <3.

Happy Saturday! I hope you all had a beautiful week. This week in the kitchen has been so much fun (and busy)! Being in the kitchen, testing, and filming has felt really good lately and I’ve been really creatively energized! And okay, I have to be honest with you all — I have already started testing and planning for fall through Christmas (my marathon, if you’ve been here for a little while then you probably know). I know, I know. It sounds a little crazy when we’re right in the middle of summer, but it really does start this early!! That being said, we are actually headed to California next week for the 4th of July with some friends and I could not be more excited! After that we have a lot more travel lined up, so I’ve been making the most of every single day in the kitchen before we get hit with all of the travel again.

A Note for the Week Ahead

Such a simple verse but one I come back to again and again, especially in the middle of a busy, full season. It’s so easy to rush through the days — always looking ahead to the next trip, the next recipe, the next thing on the list, and miss the goodness that’s right in front of us today. Every single day is a gift. Every slow morning, every season of creativity, every moment with the people we love — it’s all worth pausing for.

As you head into this new week — and into a holiday weekend next week — I hope you slow down long enough to actually enjoy it! Soak it all in; be present; rejoice in today, because today is worth it!
